Dimitra showed us how to make two different kinds of parcels. Her husband really loves eating these. We have decided to show you just one parcel (Tiropitakia) and the filling as well but we will also give you the Spanakopitakia filling too so you can have a choice.
Dough
- 500g Self-raising flour
- 250g Butter
- 1 pot of Yoghurt
Tiropitakia Filling
- 250g Feta
- a Bunch of mint
- 2 Eggs
- Salt
Mix altogether in a bowl. Season to taste. Set aside.
Spanakopita Filling
- 500g Spinach, washed and roughly chopped
- 250g Feta, crumbled
- a Bunch of dill, roughly chopped
- Spring onion, sliced
Mix altogether in a big bowl. Season to taste. Set aside.
For the dough:
Melt the butter in the microwave.
In a bowl mix the butter, flour and yoghurt together.
Transfer the dough onto the table top and knead. Only for a couple of minutes as the dough is already very soft.
Roll out the dough with a rolling pin. Not too thin, and not too thick!
Cut out circles with a mug or a wide-rimmed glass.
Fill the circles with your chosen filling. Fold in half and pinch to close. Or choose any shape you like!
Once you have finished, brush the tops with a whisked egg mix to give a nice glaze when they are baked.
Pop in the oven and bake at 220 degrees for 10-15 minutes until golden brown. Serve with a salad (we had a simple lettuce, pepper, carrot & onion salad with an olive oil, mustard & balsamic dressing).
